BLACK TORTOISE


The design of the Genbu Series is inspired by the Black Tortoise, one of the Four Auspicious Beasts of East Asian mythology. Despite its English name, it is usually depicted as a tortoise entwined together with a snake. Furthermore, in East Asian mythology it is not called after either animal but is instead known as the "Black Warrior" under various local pronunciations.

THE BLACK TORTOISE, known in Japan as Genbu (げんぶ), is one of the four guardian spirits that protect Kyoto and it is said that it protects the city on the north. Represented by the Kenkun Shrine, which is located on top of Mt Funaoka in Kyoto.

In China, it is named Xuanwu (玄武) and it represents the north and the winter season, thus it is sometimes called Black Tortoise of the North and is worshiped as a deity of the northern sky.

THE BLADE


Precision forged from high quality Japanese super steel with a hardness of 60±2HRC.

High levels of chromium (Cr) added to steel for enhanced rust resistance.

Nitrogen cooled for enhanced hardness, flexibility and corrosion resistance.

The unprecedented streamlined design at the end of the blade gives the entire knife a strong sense of life and line.

THE EDGE


Painstakingly hand polished to produce a sleek finish.

The cutting edge, where the Japanese high carbon super steel lies in, making cutting a breeze.

Razor-sharp edge is hand polished to approximately 15° on each side using the Japanese 3-step Honbazuke method, which guarantees precise cutting.

To provide you convenience in situations of scratching or rubbing food materials, we retain the sharp edge at the rear side.

Please rinse first time after using in order to keep it sharp for a long time.

Remember to dry it with a gentle fabric after cleaning to prevent rusting and damage.

Our knives are dishwasher safe, but frequent washing in the dishwasher tends to reduce their lifetime.

The blade is extremely sharp, please do not test it with your fingers and keep it out of the reach of children.
